Day two of delish and HEALTHY pancake ideas on the blog today! And today’s recipe from Natalie of Fit ‘n Free Life is totally clean and gluten free. You can’t get any easier than this yummy breakfast concoction:

Pumpkin Proteincakes

Pumpkin Proteincakes

  • 1 egg
  • 1/3 cup egg whites
  • 1 1/2 T Coconut Flour
  • 1/2 cup pure pumpkin
  • 1 tsp. Vanilla
  • 1/2 T psyllium husk
  • 1 tsp pumpkin spice

Quick and easy! Just throw everything in the blender and cook on medium heat. Top with a mix of unsweetened vanilla greek yogurt (Natalie prefers Siggi’s Skyr) and 1 T Vanilla Protein Powder (Shakeology is her choice of brand).

I’m Natalie and am a vegetarian/pescatarian/vegan depending on the day. I discovered the benefits of a plant-based diet about 5 years ago and haven’t looked back. Fitness and health have always been a big part of my life, especially since 8th grade. I was ridiculed in middle school for being chubby and made it a goal to enter high school with confidence by losing 10 pounds. I ended up losing 50 pounds just by eating healthy and exercising regularly. I actually started with my mom’s Slim in 6 video and still do the ab workout today! Little did I know Beachbody would have such an impact later in my life.

After being active all my life and playing sports through high school/college, I relocated to St. Louis. without knowing too many people, and far from family and friends. I felt a little… lost. My now coach, Lisa approached me and presented the Beachbody opportunity. I have found such strength and confidence after doing the 21 Day Fix program and training for a marathon, that I am finally feeling comfortable with myself and my goals.

That is the short version of my story, and I have created Fit ‘n Free Life to help you start or continue your journey to a fit life, free of body image struggles, confidence issues, and obviously the toxic things that go along with that. Nourishing our bodies with whole, healthy foods, I believe, is key to looking and feeling our best.
